24.Anchovy Pasta Mania

Prep Time : 10 minutes Cooking Time: 20 minutes Serves: 4

Ingredients:

✓ 4 anchovy fillets, packed in olive oil

✓ ½ pound broccoli, cut into 1-inch florets

✓ 2 cloves garlic, sliced

✓ 1 pound whole-wheat penne

✓ 2 tablespoons olive oil

✓ ¼ cup Parmesan cheese, grated

✓ Salt and black pepper, to taste

Red pepper flakes, to taste

Directions:

Cook pasta as directed over pack; drain and set aside.

Take a medium saucepan or skillet, add oil. Heat over medium heat.

Add anchovies, broccoli, and garlic, and stir-cook until veggies turn tender for 4-5 minutes.

Take off heat; mix in the pasta.

Serve warm with Parmesan cheese, red pepper flakes, salt, and black pepper sprinkled on top.
